This tart, both gourmet and refined, combines the sweetness of apples with a crispy base of brisé dough, all sublimated by a creamy device flavored with Calvados (optional). • 5 to 6 apples (Boskoop or Reinette varieties, ideal for cooking)
• 2 eggs
• 100 g sugar
• 20 cl thick cream
• 1 bag of vanilla sugar
• 1 tablespoon of Calvados (optional, but so normand!)
• 30 g butter for apples

Melt a little butter in a skillet and sauté the apples for a few minutes until they begin to brown slightly. Set aside. Then add the crème fraîche and, if you wish, a tablespoon of Calvados to bring a typical Norman touch. Mix well. 4. Spread the crumb in a buttered pie pan.
